How to make Krumkake (Norwegian waffle cookies)

Any time I make krumkake for an event, I always have to make a double batch because my family cannot resist to taste test. They especially go great with a warm mug of Wassail! [Wassail recipe here]

Krumkake -pronounced “crumb cake”- is a Norwegian waffle cookie that is rolled. It can be stuffed or enjoyed on its own (which is how we prefer it).

The process of making krumkake does take time. The waffle iron only cooks 2 at a time, and a batch usually yields around 30 cookies. When I make a double batch it takes around an hour and a half.

First, measure out your heavy whipping cream into your stand mixer and whip for about 30 seconds. This will give some air and make the cookies light. Don’t whip too long or your cookies will become holy – not in a good way.

Second, in a separate mixing bowl, whip the eggs and add the sugar and vanilla.

Add the egg mixture to the cream and add the dry ingredients and melted butter. Then beat until smooth.

Once your batter is prepared you’ll need to warm up your Krumkake iron. When the iron is heated, add a scoop of batter, close, and bake until desired color. (I prefer them to be golden, while some of our family prefers darker brown.) It takes between 30-40 seconds to cook, I like to set a timer on my phone.

Carefully remove the cookie from the iron with a fork and roll with the wooden roller. Set on cooling rack to cool.

Store in an airtight container or zip sealed bag.

Krumkake

Norwegian waffle cookie, makes about 30 cookies.
Cook Time 45 minutes

Ingredients
  

  • 1 egg
  • 1 cup sugar
  • 1 cup heavy whipping cream
  • 1 1/2 cups flour
  • 1/2 tsp cream of tarter
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 2 tbsp butter melted

Instructions
 

  • Whip cream for 30 seconds.
  • In separate bowl, beat eggs, add sugar and vanilla.
  • Add egg mixture to cream, add dry ingredients and melted butter, beat until smooth.
  • Turn on Krumkake iron. When hot, add small scoop of batter and bake 30-40 seconds. (or until desired color).
  • Remove cookie from iron and immediately roll. Place on cooling rack to cool.
